Summer brings an abundance of local seasonal ingredients; this is when Scotland’s larder really comes into its own. Perthshire berries are well worth the wait and the new season lamb from Jim Fairlie is his best yet. Duke O’ York and Sharp’s Express are both old fashioned, dry tattie varieties that make the most delicious skin on, lots of butter accompaniment to all summer suppers.
